Pancit bihon
Country of Origin: Philippines
Ingredients:
1 8 oz. pack pancit bihon noodles
1 cooked chicken breast, shredded
2 cups of chicken broth or 2 chicken bouillon cubes dissolved in 2 cups of water
1/4 cabbage, sliced into strips
1 onion, pealed and sliced
3 cloves of garlic, crushed and minced
1/3 cup scallions, cut into pieces
1 carrot, sliced into strips
2 tablespoons of cooking oil
3/4 cup diced celery
3 tablespoons soy sauce
Salt and pepper to taste
5 pieces of calamansi or 1 lemon, sliced
Descrition:
Pancit bihon is the type usually associated with the word "pancit", very thin rice noodles fried with soy sauce some citrus, and some variation of sliced meat and chopped vegetables.

Pho soup

Ingredients:
8 ounces rice noodles
12 ounces lean beef sirloin, fat trimmed
Kosher salt and freshly ground pepper
1 large onion, halved
1 4-inch piece ginger, unpeeled, halved
3 cups low-sodium beef broth
5 star anise pods
1 cinnamon stick
4 scallions
2 jalapeno peppers, preferably red and green
1/2 cup fresh cilantro
2 to 4 tablespoons fish

A Vietnamese noodle soup consisting of broth, rice noodles called "bánhphở", a few herbs, and meat, primarily made with either beef or chicken, but also tofu.

Caldo Verde
Country of Origin: Portugal
Ingredients:
½ lb of chorizo
¾ lb of kale¼ cup of olive oil
2 large yellow onions (chopped)
3 or 4 potatoes (peeled and thinly sliced)
3 or 4 garlic cloves, finely minced
6 to 7 cups water or chicken stock
2 tsp. Salt (or more) for taste.
Freshly ground pepper
Extra virgin olive oil for serving.
Description: A traditional portuguese vegetable soup; basic ingredients for Caldo Verde include: potatoes, kale, olive oil, and salt. Also you can add onions and garlic for flavour.
